Once again it's been a week. IF I would just get in the habit of writing before I read, I would get more done.

I had a good time dogsitting/catsitting/housesitting.

The week overall was good.
Tuesday morning I got up and went to sermon starters. That was interesting, It was more interesting for me to watch John (our pastor) act human. Most preachers I have known aren't that way. I then had a yummy breakfast at Northstar then to work. Band practice was a little frustrating so I had 3 drinks at Surly Girl.
Wednesday I got my hair cut, and we saw the temps drop into the 50s. brrrr.
Thursday I was tired. The lessening of daylight does that to me. Made it through rehearsal, and then went out with Michael and Chriss. Michael wants me to join in with them on a costume idea, but I am not comfortable dressing up. :-(
Friday, I crashed. I came home, made dinner (which was stirfry using this new frozen rice from Krogers. The rice is awesome. You just microwave the bag for 6 minutes and like magic you have perfect steamed rice. yummy!) and I vegetated.
Saturday after work I cleaned the apartment. I don't like doing it at night, but it's nice to then have all day on Sunday and Monday.
Sunday was super nice, but I think I'll write about it later. I want to get a move on.
So Sunday evening was really nice. I went over to Dave and Phil's and got there about 5pm. The cats were in the backyard. This makes walking the dogs a little interesting. We walked the dogs, and I read to Dave some of his work for school, and we had chipotle, and watched TV. I really enjoyed last night. His friendship is very special to me.

SO far today has been productive, if not a little expensive. I went to target which only had one of the 3 things I needed, and I forgot to look for the vaccuum cleaner bags elsewhere (long story longer, I had to vaccuum up most of my salad yesterday that I spilled so I need to change the bag) I also took out 20 dollars. Then I went to the ATM and withdrew another 20 because I wanted to get Dave some vodka. He hasn't had any in the house for a month at least because he hasn't had time to go get it. I got him a bottle of Ruby Red and some tonic water.
After that I went to the grocery store which was a smidge more than I wanted to pay, but I got fresh asparagus. YAY. I have however spent more than I have in the bank account. Not good. Of course I work on this by going after lunch at northstar.
I also walked the dogs.

SO i just had lunch, and now I am messing on the computer before I go to the kitchen. I think I will read some this afternoon as well.

DINNER

Oct. 15th, 2007 07:29 pm
I made the best dinner I've made in a while.

First I penne pasta with the following sauce
Saute in olive oil:
Fake Bacon (or real bacon for you omnivores on my list)
Onions
Mushrooms
Garlic
Artichokes
Salt and Lots of pepper
Cook until tender and there is some slight carmelization
Add about a tablespoon of Flour
cook for a minute to cook out "raw" taste of flour
Add 1/4 cup of red wine vinegar (or your favorite real wine)

and 1 cup of water.

Drain pasta and add to sauce and cook for another minute or so to get the pasta nice and coated.
Top with freshly grated parmesan cheese.

So YUMMY!

Then for dessert- I'm making this for a thing at work on Thursday and this recipe can be a smidge tricky. It is really, really good though.

Pumpkin Pie Cake

1 box yellow cake mix (remove 1 cup)
1 stick melted margarine
1 egg

Filling:
1 lg. can pumpkin
3 eggs
1/2 c. brown sugar
1/2 c. white sugar
3 tsp. pumpkin pie spice (I might be tempted to use a smidge more)

Topping:
1 c. cake mix
1/2 c. nuts
1/2 stick soft margarine
1/2 c. sugar

Combine cake mix, margarine and egg. Mix well. Put in 13x9-inch pan.
Filling: Mix together and pour on batter.

Topping: Sprinkle over filling (The topping will be crumbly, like the topping for a crisp.)

bake at 350 degrees for 1 hour and 10 minutes (it doesn't ever take me that long- I normally think 1 hour is more than enough).
